Ginger Beef
1/4 cup fresh ginger root, finely grated or chopped (For a spicier dish, use 1/3 cup.)
2 tablespoons olive oil
1 green bell pepper, chopped
1 pound lean ground beef
1 (14 1/2-ounce) can stewed tomatoes
1 teaspoon salt
1 teaspoon black pepper
2 cups hot, cooked rice
In a 12-inch skillet, brown the fresh ginger root in the oil until brown and crisp, as you would garlic.
Add the onions and green bell pepper and saute briefly.
Add the meat and brown.
Chop the tomatoes in the blender for 4 seconds.
Add the tomatoes, salt, and pepper to the meat mixture.
Cover and simmer for 20 minutes.
Serve over the rice.
Makes 6 servings.
